I overslept my alarm this morning. Missed being able to make it to class w/out being like, an hour and a half late. Will call the prof later today to get the homework for Wednesday.

And since then, I'm still in bed, with my laptop, listening to NPR. I have been totally inable to drag myself out of bed to get anything done. Blah.

Except I need to get out of bed *now* 'cause I'm meeting someone for lunch in Harvard Square at 1. Looking forward to the lunch. Not looking forward to the doning of clothes.

Can I buy an Island and move y'all there with me and we can all go around nekkid? Please?

Though I have to admit that being able to go around naked when I feel like it is one of the BIG plusses of having our own place.

I'm happy to move, heck, I'll even volunteer to do the nekkid bacon cooking. I'm just that kind of guy.

BTW, I added you because, well, it just seemed silly that I wasn't stalking you yet. Needing a new hobby. Enjoy!

The solution to naked bacon cooking: oven frying. Just lay them on a rimmed metal pan in a single layer and cook far about, oh, 10 minutes at 400 degrees. Rotate the pan in the middle if your oven doesn't heat evenly front to back.

I know, I know, it sounds weird. But really, it works. Just be sure to use a metal pan - glass does *not* work. No bacon spatters on your bare torso, plus you can do something else while it cooks.

True, and I have used this method, myself. I do find, however, that the texture isn't quite when I consider optimal. It does help if I put a roasting rack inside a cookie sheet but, again, it's not all that it could be.

It does tend to be a bit flat. I haven't experimented with it enough to give up yet, though. Wouldn't the roasting rack keep the bacon out of the rendered fat?

My theory is that the rendered fat isn't a high enough temperature to crisp the bacon properly. When you're cooking on the stopvetop with the skillet directly on the heating element, the fat is hotter and therefor it deep-fries the bacon more efficiently. So, by using the roasting rack, the bacon gets crispier by being surrounded by dry heat rather than soaking in tepid fat.

Not crisping is not a problem I've had. If anything it's too crispy. So crispy as to be brittle.
